Italian Sausage Penne with Cream Sauce
Serves 6
This a simple, delicious pasta dish that will impress your guests! Because of the short prep and cooking time, it is fantastic for week night family dinners. This is one of my go-to recipes when we are hosting last minute guests or if I have an opportunity to bring a meal to a friend with short notice. I keep some Italian Sausage stocked in my freezer and usually have all the supplies on hand. It is a dish that is well loved by adults and kiddos!

Ingredients
  1. 2 Tablespoons of Olive Oil
  2. 1 Medium Onion, diced
  3. 3 garlic cloves, minced
  4. 1lb of sweet Italian sausage, casings removed
  5. 2/3 cup dry white wine
  6. 1- 14 1/2 oz can diced, peeled fire roasted or plain tomatoes with juices
  7. 1 cup whipping cream
  8. 3-6 Tablespoons of fresh, chopped parsley
  9. salt and pepper to taste
  10. 1 cup of freshly grated parmesan cheese
Instructions
  1. First boil a pot of water seasoned with a few tablespoons of salt. Once boiling add 1lb of penne pasta and cook until al dente (this means firm to the bite).
  2. Warm olive oil in a large skillet over medium to high heat. Add onions and cook until almost translucent at which point, add the garlic. Cook until onions are translucent and garlic is sauteed- be careful to make sure the garlic does not burn. Nothing is more potent and distasteful than burned garlic. Add sausage and saute until golden brown. Transfer sausage mixture to a paper towel lined plate to drain/absorb the grease from cooking and set aside.
  3. Next, add wine to skillet and boil until almost all of the liquid evaporates. This process will only take a few minutes. Add tomatoes with juices and allow them to simmer for a couple of minutes. Add cream. Whisk and simmer the cream and tomatoes until the sauce thickens slightly. Season the sauce with salt and pepper to taste. Next stir in 3 tablespoons of fresh parsley. At this point the sausage, garlic, and onions can be added to the cream sauce and stirred.
  4. Take a moment to drain the pasta and either add it directly to the pan of sausage and cream sauce or transfer the mixture and pasta to a serving bowl. Add a few handfuls of fresh Parmesan cheese and stir one last time. Top with fresh parsley and Parmesan cheese just before serving.
  5. This dish is perfectly accompanied by salad and a crusty baguette.
